Cupping Notes
The dry grounds offer a rustic sweetness — pungent coconut palm sugar with accents of bran muffin and spice cake. The wet aroma deepens the sweetness with an intriguing peppery quality. This is a remarkably versatile coffee across roast levels: lighter roasts bring positive acidity (rare for a decaf), with flavors of rice syrup and herbal tarragon. Moving toward Medium, expect balanced bittersweet chocolate tones with a brisk citrus accent that fades into chipotle-laced chocolate and a clean finish. Medium-dark roasts are more bodied and bittersweet, with cocoa crisped rice, chocolate malted grain, and black sesame brownie. Outstanding as espresso.

Farm Notes
Papua New Guinea occupies the Eastern half of the island it shares with the Indonesian province of Irian. This lot is comprised of coffee from many small organic farms in Goroka, part of the very high altitude Eastern Highland region, where farms are typically less than 1 hectare on average. The coffees here represent the cleaner, more balanced character of PNG — more reminiscent of a good Central American than the typical Indonesian profile.
This coffee was decaffeinated by the team at Swiss Water Decaf in Vancouver, Canada. Their water-only process removes 99.9% of the caffeine without any chemical solvents — one of the gentlest decaffeination methods available, preserving the coffee's natural character beautifully.
